INGREDIENTS

  • ½ cup of softened butter
  • ½ cup of sugar
  • ½ cup of packed brown sugar
  • 2 large eggs
  • 1- ½ cups of mashed ripe bananas (about 3 large bananas)
  • 3 teaspoon of vanilla extract
  • 2 cups of all-purpose flour
  • 3 teaspoon of baking soda
  • 1 cup of semisweet chocolate chips

DIRECTIONS

  1. Preheat the oven to 350°
  2. Cream the butter, sugar and brown sugar
  3. Beat in the eggs, bananas and vanilla
  4. In a separate bowl combine the flour and baking soda. Add to the creamed mixture until combined.
  5. Stir in the chocolate chips
  6. Fill greased or paper-lined muffin cups two-thirds full
  7. Bake for 20-25 minutes or until a toothpick comes out clean

Bake: 20 min + cooling

Yield: 18 muffins
